Pesach isn’t Pesach without coconut cookies. When I first made this recipe, I was sure it would be disastrous because it just seemed way too easy. I was wrong, they are delicious and crazy easy. Make them with your kids.
Ingredients
250g (9 oz) desiccated (grated) coconut
3 large eggs
¾ cup sugar
How to do it
1. Pre-heat the oven to 190°C (375°F)
2. Mix all ingredients together (make sure the mixture is quite wet – if not, then add another egg)
3. Shape into half golf-ball-sized mounds and place on a greased baking tray covered with baking paper.
4. Bake until lightly browned – about 15-20 minutes

Did you ever dip them in chocolate after? (like a mounds bar?)
I haven’t but it’s an outstanding idea that I am going to adopt this year. In would just melt about 200g of dark chocolate over a double boiler and dip away. Now I’m excited!
